Veggie burgers
Shiitake mushrooms are a good source of protein, as are beans. Both add flavour to these burgers. Miatake mushrooms have less protein but are flavourful and help fight cancer. Consider using a mixture of shiitake and miatake.
1 cup finely chopped shiitake mushrooms
1 finely chopped onion
4 cloves garlic
1/2 carrot grated
1 cup prepared bulgar
1 cup cooked beans (pinto, black)
2 green onions sliced fine.
salt, pepper,
1 teaspoon soy sauce
Sautee the onion, garlic and mushrooms until soft. Add the carrots towards the end, just to soften.
Mash the beans in a bowl. Add the prepared bulgar. Add onion/mushroom/garlic/carrot mixture. Add green onions. Add seasoning. Mix well. Form into patties and chill.
Fry on greased pan or grill 4-5 mins per side or until a nice crust forms on the surface.

Substitute quinoa for bulgar.
Make sure your soy sauce is wheat free.
